Outstanding from beginning to end. Starting with friendly greeting, offering & explaining menu suggestions with clear Albanian culture knowledge, Rachel is simply awesome. Even though there were several delicious sounding specialty cocktails, she was extremely helpful and willing to go out of her way with cocktail accommodations to special dietary restriction- and the drinks did not disappoint! She *listened to us as customers & served food that was just what we wanted on a hot evening. We were a couple of the only customers who wanted to sit outside & it wasn't a problem at all. My friends and I went for a birthday dinner and it was amazing! I had never been here, but now I will definitely go back! The waitress/bartender was beyond amazing and helpful and the chef even came to check on our food! The best risotto I've ever had! So smooth and flavorful! We were passing through late at night and happened upon this food gem! Tried the stuffed mini bell peppers (we can then sweet peppers in TX), they were crisp and fresh. Then shared the Salmon with capers and risotto. I was in love with 2 things about this dish. The over sauteed capers- I've never had them this way and will never cook with them again any other way! I seriously wanted an entire bowl of just the capers! Second, that risotto! It was phenomenal! Spending a weekend in Pueblo and looked for places that had good ratings and the menu and food looked good. Well, Bistoro has great, amazing food! My wife had the Basque Pork and I had the Chicken al Fungo and both dishes were amazing. Light, not heavy meals with some incredible potatoes. Besides the great food, Rachel was not typical server. She was charming, knowledgeable about the menu and made our evening complete by giving us a hug at the end of our dinner. The place is visited by locals and everyone stopped by to give Rachel hugs so I asked for one :) Thanks guys for a wonderful evening. Fabulous restaurant, nice ambiance and super friendly and professional staff. The salads, paninis were great. Nice wine list, great lentil soup and bruschetta. And, walking distance from the hotel, will definitely return soon. I love that they embrace their basque and also Eastern European heritage. Stopped in for an assortment of small plates for our dinner. We sat outside — which was nice. We were greeted by a very knowledgeable and helpful staff member. We ordered a tapas platter, mish steak, Choco Pueblo pintxos, and some Pueblo cheese fries. It was all very good! The cheese fries and the choco pintxos were the real winners! Highly recommend those items. It was all good! Would totally visit again and try more menu offerings. Don’t let the unassuming storefront scare you away — it is really worth it! I have eaten at five star restaurants before and Plume (who owns Bistoro) still makes the most delicious food I have ever had. Cute new place you need to try in Pueblo: tapas style food, or shareable entrees. Save room for desseet. Everything was delicious. Large selection on wines and bar items. Perfect for happy hour, long conversations, or first dates. Owners and staff are friendly people. Decided to try out a relatively new small business as my wife and I love to support all small business in our town! My wife is pregnant so we decided to do takeout. We get home starving and excited to try something new and we’re welcomed by an overwhelming smell or some sort of alcohol coming from the bag, okay I’m sure a sauce was cooked with some kind of wine or liquor no problem! My pregnant wife takes a bite of my dish the Steak Au Piovre and was welcomed by an overwhelming taste of alcohol seems as though it may not have been cooked off? My steak is drowning in liquid and looks as though it was boiled and not seared(see pictures). The steak was extremely fatty and full of tendons which I was unable to chew through. My wife had the Steak Frita and was met with the same quality of steak. While we are always happy to pay a high price at fancier restaurant I do not believe the price reflects the quality of food! As someone who cares about small business’s in town I hate to leave a review so low but we had to trash our meal and eat elsewhere due to the poor quality control. I hope this was a one off experience and I hope this review helps curate more passion going forward! Edit to respond to owner: I’m not sure if it has ever occurred but I do like 25 minutes away so I would not return 50 minutes both ways to feed food to “strays” appreciate the remedy not the most classy response though. We've been waiting to come here for a while and we were not disappointed. When I initially called they said, there is no need for a reservation because it's a weekday but I'm glad I made one because it got busy fast a few minutes after we were sat down! The menu is not extensive by any standards. There isn't anything super spicy either. But they have a fair bit of choices. We started with the house tray for the tapas and the crostinis with a garlic bisque entree to share among the 3 of us. Our main entrees included the Bisteak, the Lobero and the Fieri with a side of Al Eti fries to share and the Caesar salad. On the house tray, we loved the tomatoes and the peppers stuff with cream cheese. That was super delicious! The crostinis were of 4 different varieties - hummus with olive, bruschetta, Pueblo chilli's with cheese and a cherry compote with cheese. Our favorite was the bruschetta followed by the hummus and olive. We were told that the Pueblo chili one would have a kick, but it did not. The sweet cherry compote one was interesting esp with the feta, but it felt too sweet, so won't order that next time. The garlic bisque is delicious, esp with the bread. If having for one person, go with the side of you want any space for more food. The entree is good to share among 2-3 people. For the entrees, the portion size is HUGE! I loved my Lobero which had mushrooms, chillis, caramelized onion and aioli. It was very tasty. The Bisteak was similar to a Philly cheese steak but without the cheese. It was also very good. The Fieri was a little disappointing as the pork was quite chewy and it was bland. The fries were delicious but I do wish the oil had been all over the fries and not just in the bottom. The salad was tasty. We didn't have desert but we did have a glass of Albarino white wine from a Spanish winery. Close to a chardonnay and didn't really have much of a buzz which I appreciated. All in all, cute, oldish place. Their servers are nice but may need to work on their ability to identify dishes correctly. Price is decent but not cheap for sure.
