While staying on the East end of Grand Cayman, one of the places that kept coming up with staff was Caboose. So we just had to try it. We came back from touring to stop there for an early dinner.
There was a bit of rain and wind as we came in so the proprietor partially closed some tarps around three sides. Only one other table when we came so we sat immediately, then got up to read the menu and specials on the wall.
As our custom, we ordered three different meals so all could try each. I ordered the fish we had heard the best things about, the Coconut Curry Grouper. My wife ordered the Garlic Shrimp. My daughter the Conch Fritters and my granddaughter the Brac Attack Bluff Burger. We also tried the Conch Soup.
While we waited we were visited by a small kitten meowing constantly. The girls tried to pet him but when they got close he moved away. Later when our food came we found out how to get him close enough to hand feed a morsel.
Conch Fritters came soon, hot, spicy and delicious. Everyone loved them. Then our meals came, except the burger. Sure enough, the Grouper was fantastic - the hit of the dinner. Shrimp was excellent also. Soup wasgood, hot and spicy and tender.
Then the burger came and was divided four ways. Wow! It was wonderful and had a nice heat. It was a very close second on our ratings. We almost, very close, ordered a second burger because a fourth was just not enough. But couldn’t because we weren’t hungry.
While we were there a dozen locals came in, which just confirmed our choice. You really must try the Grouper and the burger!

Visiting Grand Cayman for a few days and felt hungry after snorkeling at Eden Rock. Drove randomly around Georgetown until we saw The Caboose. So glad we stopped. The food was excellent. Split the 2 meat/4 sides lunch special. Chicken and brisket were both juicy and tender. Every single side was flavorful and delicious (mac and cheese, Brussels sprouts, slaw, and sweet potato salad). Also very friendly service. Would definitely eat there again.

We just returned from a ten day stay on the north side of Grand Cayman. We ate at a variety of restaurants around the island and could have easily driven past The Caboose, but we're sure glad we decided to stop. Over several visits we tried six different dishes and all were excellent. Ironically, most restaurants we tried over-cooked fish to the point it was dry. Blossom, the chef at the Caboose was the exception - the fish was prepared perfectly. Other dishes we tried were equally good (order the spicy beef if it is the daily special). Symone was our server for two of the visits - even when busy she was very efficient and super friendly. I'm pretty picky about awarding five stars, but The Caboose deserves them along with my strong recommendation to give it a try.
Eeish, Caboose's offerings are so dull. Same options every working day. They need to be very creative with their menu. Maybe start a themed day menu. The staff is super friendly, but the menu lets them down big time.
